An agent used as a stabilizer to improve the stability of an emulsion. Emulsifying agents are substances comprising both oil-soluble hydrophilic (nonpolar) and water-soluble hydrophilic (polar) that act as a stabilizer of the droplets (globules) of the internal phase of an emulsion.
